There are a lot of visitors coming to Castalla to taste the Gaspatxos, a dish famous all along Alicante province.

There are several restaurants preparing this delicious dish in the city. Its main ingredients are: crumbs of cake without baking powder, abundant pieces of assorted meat, some mushrooms and snails as well as some fried tomato and onion, and aromatic herb named pebrella, which gives the typical flavour.

Tasting a good dish of gaspatxos must follow a ritual, which becomes a pleasure for the palate: first the gaspatxos are poured onto a baked cake, accompanied by a good red wine and all i oli, finishing with a big piece of the cake spreaded with some honey and a cup of wild thyme.

Besides the gaspatxos, there are some other typical dishes, as Borreta de Bacallar (Cod stewed with potatoes), Arròs i conill (Rice with rabbit), Putxero de Fassedures.
